dc.description.abstract | El consumo de suplementos proteicos (SP) sigue extendiéndose y diversificándose y sus consumidores ya no son sólo deportistas. Además de proteínas, estos productos suelen contener otros componentes minoritarios no indicados, normalmente, en el etiquetado. Entre sus riesgos, se identificado algunos contaminantes, como metales pesados. Es por ello por lo que, la evaluación nutricional debe de acompañarse del análisis de riesgos. Este Trabajo de Fin de Máster (TFM) tiene por objetivo principal caracterizar el riesgo derivado de la exposición dietética a un micronutriente, el cobre, y a un metal tóxico, el cadmio, a partir del consumo, en distintos escenarios, de suplementos proteicos. Para realizar este estudio, se adquirieron 32 muestras de SP de origen europeo y formulados con proteínas procedentes de diferentes fuentes, tanto animales como vegetales. Los niveles de Cu y Cd fueron analizados por Espectrometría de Emisión Óptica con Plasma Acoplado Inductivamente (ICP-OES), tras una mineralización por incineración. Tras la caracterización del riesgo, se concluye que el consumo se estos SP siguiendo el consumo recomendado en la mayoría de los envases (30 g/día) no generaría efectos negativos sobre la salud, si bien en consumidores diarios debe de considerarse esta fuente dietética al estimarse la ingesta total de estos dos metales. | es_ES |
dc.description.abstract | The consumption of protein supplements (SP) is spreading and diversifying, and its consumers are no longer just athletes. In addition to proteins, they usually contain other minority components normally not indicated on the label. Among its risks, some contaminants, such as heavy metals, were identified. That is why the nutritional evaluation must be accompanied by a risk analysis. The main objective of this Master's Thesis (TFM) is to characterize the risk derived from dietary exposure to a micronutrient, copper, and a toxic metal, cadmium, from the consumption of protein supplements in different scenarios. To carry out this study, 32 samples of PS of European origin and formulated with proteins from different sources, both animal and vegetable, were acquired. Cu and Cd levels were analyzed by Inductively Coupled Plasma Optical Emission Spectrometry (ICP-OES) after mineralization by incineration. After the risk characterization, it is concluded that the consumption of these PS following the recommended consumption in most containers (30 g / day) would not generate negative effects on health, although in daily consumers this dietary source should be considered when estimating the total intake of these two metals. | en |
