Determinación de plaguicidas en muestras de vino: riesgo en la ingesta

Abstract

El vino es un elemento muy importante en la cultura y gastronomía de Canarias. Para evitar el deterioro de las uvas y cuidarlo de las plagas se usan constantemente fitosanitarios con distintos componentes. Estos plaguicidas pueden ser perjudicial para la salud del consumidor, y es uno de los puntos que trataremos de estudiar. Durante este proceso hemos analizado, a través del método QuEChERS y GCMS/MS, un total de 41 muestras de vino tinto procedente de la Macaronesia, con el fin de comprobar la concentración de los fitosanitarios en el producto final. De esta manera compararemos con la normativa vigente si las muestras analizadas cumplen los requisitos y si son o no nocivos para la salud.

Wine is a very important drink in the gastronomy of the Canary Islands. To prevent the deterioration of the grapes and protect them from pests, phytosanitary products with different components are constantly used. These pesticides can be harmful to the health of the consumer, and this is one of the points that we will try to study. During this process we have analysed, through the QuEChERS and GC-MS/MS method, a total of 41 samples of red wine from Macaronesia, in order to check the concentration of phytosanitary products. In this way, we will compare with current laws if the samples analysed meet the requirements and whether or not they are harmful for us.
