La investigación sobre la demanda del turismo gastronómico: conocimientos previos y evolución temática

Abstract

La proliferación de artículos relacionados con la demanda del turismo gastronómico exige nuevos conocimientos mediante la revisión de sus aportes. Este estudio tiene como objetivo analizar el progreso de la investigación en torno a la demanda del turismo gastronómico. Estudios anteriores han resaltado las características y los casos de estudio de este tipo de demanda, pero ninguno describe el tema de manera exhaustiva. Para llenar este vacío, esta investigación adopta un enfoque exploratorio, descriptivo y analítico, basado en una revisión narrativa integral y el análisis bibliométrico. Para su desarrollo, se analizaron 68 contribuciones científicas, publicadas entre 2017 y 2023, en dos bases de datos científicas: Scopus y Dimensions. Los resultados consolidan las principales estructuras de investigación de la demanda del turismo gastronómico, construyen un marco de referencia sobre la evolución de los contenidos desde un nivel científico y reafirman la importancia de orientar la planificación, la imagen turística y el desarrollo de las diversas prácticas que componen esta tipología, que, a su vez, permite orientar la investigación futura.

The proliferation of articles related to the demand for gastronomic tourism demands new knowledge by reviewing their contributions. This study aims to analyse the progress of research on gastronomic tourism demand. Previous studies have highlighted the characteristics and case studies of this type of demand, but none describes the topic comprehensively. To fill this gap, this research adopts an exploratory, descriptive and analytical approach, based on a comprehensive narrative review and bibliometric analysis. For its development, 68 scientific contributions, published between 2017 and 2023, were analysed over two scientific databases, Scopus and Dimensions. The results consolidate the main research structures of gastronomic tourism demand, build a frame of reference on the evolution of the contents on a scientific level and reaffirm the importance of guiding the planning, tourism image and development of the various practices that make up this typology, which, at the same time, allows guiding future research.
