AB The intention of this study is to analyse the development and impact of tourism in the CanaryIslands and the need for a remodelling of the hotelry and catering sector and the urgentimplementation of sustainable practices. An exhaustive study is carried out of the story of GFHoteles, and of the practices implemented by the Canarian chain at a local level to combat eachof the impacts. The results obtained suggest improvements and sustainable proposals for thefuture.
