Evaluación nutricional y toxicológica A1 Zegarra Valdivieso, Bruno Daniel K1 Comida rápida, Evaluación nutricional, Toxicología AB Fast food is greatly consumed for many reasons, for lack of time and financial restrictions, among others.Among this category we can find hamburgers, such meat can be bovine, but it is actually those based on vegetables which are increasing in popularity. Those canbe contaminated with toxic materials, due to the process of the raw material orenvironmental contamination. The objective of this study was to determine these metals and compare them betweenMcDonald's burgers, Burger King and Burger Mel. Given the circumstances caused byCOVID-19, it could not be completed, so a bibliographic review was carried out, collecting information on similar foods: meat products and vegetarian hamburgers.Apparently, there are some major differences compared to the average level of metals inmeat-based produce and vegetarian hamburgers. And taking into account therecommended daily intakes (RDI) and the acceptable daily intakes (IDA) the toxic riskwas evaluated. The consumption of 100g per week of these types of food would mean avery low contribution of metals. Also determined in the study, is the quantity which wouldhave been consumed in these foods, when toxic effects are shown in the consumers.
