They are the most caloric active ingredients. From each gram of them, 9 Kcal of energy are obtained. They are essential components of the body with functions such as energy storage, structural components of cell membranes or for the formation of compounds such as bile acids, steroid hormones, prostaglandins or leukotrienes [1,2]. High concentrations of cholesterol-rich lipoproteins can lead to atherosclerotic diseases. According to a HISPALIDIP study [3], the prevalence of dyslipidemia in Spain is high, since one in four patients is diagnosed with a cardiovascular risk factor. This work intends to evaluate, from the point of view of lipid metabolism, taking into account analytical parameters that we will see later obtained from a database of individuals, the results and their evolution over time, in addition to the evaluations of atherogenicity indices. The parameters evaluated in this study, the methodology followed, the objectives, their implications for the health of the estimated example cases, as well as the conclusions reached, will be detailed.
