Reconhecimento da identidade gastronômica dos imigrantes alemães no município de Águas Mornas – Santa Catarina: bases para o fortalecimento do turismo local

Abstract

Águas Mornas é uma cidade catarinense com 93% de descendentes de alemães. É conhecida por suas belezas naturais e águas termais, mas pouco se conhece de sua gastronomia. Este estudo objetivou reconhecer a identidade gastronômica local para fortalecê-la. Foram realizadas 8 entrevistas semi-estruturadas com antigos descendentes de imigrantes, pelo método da História Oral. As entrevistas foram transcritas na íntegra, para análise qualitativa dos discursos sobre histórias de vida e receitas de família. Os resultados mostram receitas típicas da gastronomia alemã, aprendidas com mães ou avós, havendo raras alterações de ingredientes e modos de preparo. No entanto, as receitas não vêm sendo repassadas às atuais gerações e isso pode comprometer a cultura gastronômica. São necessárias medidas de intervenção local para evitar que esta herança cultural se perca.

In Santa Catarina, Águas Mornas city has 93% of German immigrants in its population. Is a city known for its natural beauty and thermal waters but little is known about the local gastronomy. The objective of this study was to recognize the local gastronomic identity to strengthen it. Eight semi- structured interviews were performed with the old descendants, through the Oral Story method. The interviews were fully transcribed for qualitative analysis of the speeches focused on life stories and family recipes. Results show typical recipes from the German gastronomy, learned with mothers or grandmothers with few changes of ingredients and the method of preparation. However these recipes are not been passed to the currents generations and this can compromise the gastronomic culture. A local intervention is necessary to avoid the lost of this legacy.
