First, it proposes methodological advances in the criteria forassigning additional land to agricultural uses in the context of a strategy to increase food selfsufficiency and by the means of a foodshed model. Secondly, this methodological proposal isapplied to the case of potato production in Tenerife. The additional production that would benecessary to cover all the insular demand is estimated and to cover this deficit, criteria forassigning additional potato production to the agricultural plots are applied. These prioritizationcriteria combine the productive adequacy of different areas, differentials in opportunity costs,yields, territorial productive specialization and the size of the productive units. This procedurecontributes to reducing one of the usual weaknesses of the foodshed models: the scarceincorporation of optimization criteria in the local territorial projection of an uncovered demand forfood.
